Triple Chocolate Marshamllow Cookies | Recipe

Today has been a very lazy day and I felt like actually doing something other than lying horizontal in my bed on tumblr. So I popped into the shops to get some ingredients and decided to bake some cookies. I was inspired by Tanya Burr's original recipe of this, but I added a cheeky extra ingredient. These are literally the best cookies in the world. Enjoy!

You will need:
200g butter
300g caster sugar
1 large egg
275g self-raising flour
75g cocoa powder
1tbsp milk
1 bar of dark chocolate
1 bar of milk chocolate
1/2 bar of white chocolate
A large hand full of white marshmallows

  1. Preheat your over to 200c.
  2. Using an electric mixer, mix together your butter and sugar until creamy.
  3. Crack in your egg.
  4. Add all of your dry ingredients. If too dry, add your tbsp of milk.
  5. Chop up all the chocolate.
  6. Cut the marshmallows into quarters.
  7. Add your chocolate and marshmallows into the mixture.
  8. Once everything is mixed in, line 2 baking trays with foil.
  9. Grab hand full of the mixture and place them on the trays with about an inch between them. Try to place the cookies so the marshmallows are on the top, otherwise the marshmallows will melt and burn.
  10. Pop the cookies in the oven for 11 minutes. When taken out, they will not looked cooked, but don't put them back in because they will burn and become really hard and bitter.
  11. Leave them on a wire rack to cool for 30 minutes.
*If the cookies are a bit to rich for your liking, just remove one of the types of chocolates*

Hope you enjoyed your delicious triple chocolate marshmallow cookies, I know I did. I especially like them when they are still warm and the chocolate and marshmallows are still a bit melty.
