Pancakes are one of my favourite things to make (when I have the time). The recipe I use is actually meant for waffles, but it makes just as amazing pancakes. The original recipe is from Sorted Food can can be found here. I normally only make about half of the recipe though and it makes about 6 medium sized pancakes.
You will need:
110g flour
1/2 tsp salt
35g caster sugar
1 tsp baking powder
2 eggs
170ml milk
1/2 tsp vanilla extract
a knob of butter
and any toppings you like
- Mix together the flour, salt, sugar and baking powder in a bowl.
- Separate the eggs and set aside the white in a clean bowl.
- Combine the egg yolks, milk and vanilla extract.
- Whisk the wet ingredients into the dry.
- Whisk the egg white to medium peaks and gently fold through the batter. (An electric whisk will make this a lot easier)
- Heat a pan to a medium high temperature and pop in the butter.
- Spoon in the batter to the desired size. Fry until the pancake just begins to cook around the edges and bubbles start the form. This usually takes about 2 minutes.
- Flip the pancakes over and cook for another 2-3 minutes, until both sides are golden.
- Serve up with any desires toppings (I love using Nutella or Golden Syrup).
